This warming vegetarian soup is intentionally balanced to keep your energy stable and help you feel full, in a clean and healthy way.
3 tbsp. extra virgin olive oil
1 large onion, chopped
8 garlic cloves, chopped
4 carrots, chopped
4 celery stalks, chopped
1 tsp. salt
1 (16 oz.) bag dried lentils
64 oz. vegetable broth
1 can diced tomatoes
Fresh parsley for serving
Heat the oil in a large pot over medium heat. Sauté the onion for 10 minutes. Add the garlic, carrots, celery and salt and sauté, stirring often, 5-8 minutes more.
Add the lentils, broth and diced tomatoes and simmer, covered, stirring the mixture occasionally for 25-30 minutes, until the lentils are tender.
Season with extra salt and pepper and pepper to taste. Top each serving with fresh parsley as desired.
