DALLAS -- With Easter coming up, I've been thinking a lot about eggs.
Eggs are key, whether you're celebrating your favorite Springtime holiday, like Easter Sunday, or baking just about anything.
They say a chef can find out how good his line chefs are by putting them in a kitchen with just an egg, and seeing what they can come up with. And there's a good reason for that!
Eggs are the building blocks to sauces, cookies, baked goods, souffles, quiches, tarts... You name it, chances are it's got egg in it.
But eggs can be a dish all on their own, too!
My favorite? Deviled eggs. Once you have the base, you can put anything you want in them. Mine are garnished with some paprika and chives!
Then there's scrambled eggs. My dad used to make them with onions and cheese. Scrambled eggs go from breakfast to dinner, and everywhere in between.
And of course, the pretty ones that look up at you from your breakfast plate -- sunny side up eggs!
