Homemade Fruit Roll-up or Fruit Leather
4 cups cubed mango (any seasonal fruit can be substituted)
1 cup diced carrots
1/3 cup honey
1/3 cup lime juice
1/2 tsp salt
Preheat oven to 200 degrees. Place all ingredients in a blender and blend until it becomes a puree. Place mixture into a sauce pan, at medium high heat, reduce to half (30 minutes). Line a sheet pan with a silpat (or parchment paper sprayed with vegetable spray), spread the mixture evenly on pan and bake for 3-4 hours. Remove from oven and allow to cool. Peel dehydrated puree off silpat, lay on top of wax paper and cut into strips. Roll them up and store in cool, dry place for up to 1 month.
