DALLAS – From fine dining to casual bar food, that's the story of Alfredo Valle, the executive sous chef at The Nodding Donkey located on SMU Boulevard.
While some may call this transition a downgrade, Valle explains the move gave him free reign to utilize his ideas, "It's one thing I like doing myself -- being able to create my own recipes, my own dishes. And the owner here gave me carte blanche to be able to do that."
And that's just what the new Nodding Donkey menu offers.
So, what kind of goodies is this well-oiled machine serving up? You can pick from American not-so-classics like the silver bowl salad topped with spicy chicken and the mushroom onion and Swiss burger and the BBQ brisket grilled cheese.
Then there's Texican, with items like chicken and brisket enchiladas, along with quesadillas, tacos, and fajitas.
Chew on This, The Nodding Donkey has homemade donkey balls. Think of it as a modified, provocative take on traditional mozzarella sticks, deep fried and stuffed with Oaxaca cheese and jalapenos.
Another risqué starter? The smoked guacamole with roasted Fresno peppers and smoked bacon. Ohhhhh bacon.
Now if you're not willing to take it that far, but you need a fix, there's always pizza. And depending on the day and time, it'll likely be half-off.
