A Berry Delicious Dessert for the 4th of July

This dessert is a treat for all your senses. It’s easy, tasty, and pretty! Make it for your 4th of July party — and any other party, too!

Berry Delicious Dessert

Ingredients:

  • 32 oz. strawberries, sliced
  • 9 oz. blueberries
  • 8 oz. Cool Whip
  • 10 oz. angel food cake, cut into 1 inch chunks
  • 2 cups vanilla pudding (homemade recipe follows)

Instructions:

In a trifle dish, put half each of: cake pieces, strawberries, blueberries, pudding and cool whip. Add the rest of the cake pieces. Set aside a handful of strawberries and blueberries (for garnish), and then add the remaining berries to the bowl, the rest of the pudding and Cool Whip.

Garnish with the berries you have left.  For best results, let the dessert set for a few hours before serving.

Serves 12.

Vanilla Pudding

Ingredients:

  • ¼ cup sugar
  • 3 tbsp cornstarch
  • ½ tsp salt
  • 2 2/3 cup milk
  • 4 tsp vanilla extract
  • 2 egg yolks

 

Instructions:

Combine the sugar, cornstarch and salt in a medium pot.  Turn the heat up to medium and whisk in the milk.  Add the vanilla and egg yolks. Whisk continuously, bringing the mixture to a light simmer for 1-2 minutes until thickened. Remove from heat and set aside to cool.
