UNIVERSITY PARK -- "The timing could not have been worse," Olivella's Owner Charlie Green said, walking through broken glass into his restaurant Saturday morning.
Not much has gone wrong for Green since he made his pie in the sky dream a reality in 2007 by bringing traditional Italian pizza to Dallas. It was even named best pizza in the state of Texas by USA Today.
That easy cheese existence changed for Olivella's Friday, though, when lunch rush took on a whole new meaning.
"There are still cups and plates on tables because people had to flee when the firemen came up and said to get out," Green said.
The three alarm fire that started next door at Goff's Hamburgers put Olivella's and several other nearby businesses in serious jeopardy.
"There were guys on hook and ladders showering down water from above," Green said, recounting his experience watching the blaze. "There was a bunch of water that came down through the roof. It's an old, flat roof. The fire department assessed that they needed to demolish the building in order to get at the flames."
It was a saucy situation, especially since Green just had to stand back and watch like everyone else.
Luckily for him, the two buildings touch but don't actually share a wall.
For Green and Olivella's, the contingency plan is already in place. He hopes to reopen in 2-3 weeks once all the water damage is taken care of. Until then, they have three other locations at Lakewood, Victory Park, and Fort Bowie. On top of that, their food truck is set to serve in front of the University Park location while the floor and ceiling damage is fixed.
"We're hoping the city will permit us to park it out front while we're going through this mild reconstruction," Green said.
Mostly, he's just thankful his brick oven pizza business didn't go up in flames.
