DALLAS – Concession stand items are making a pretty big comeback, especially at American Airlines Center in Dallas. And you have executive Chef Mark Mabry to thank for that, as well as his – well – mom.
"My mom was a stay-at-home mom, fantastic cook,” Mabry told NewsFix. “Her rule was if you came home and wanted a snack you had to help her make dinner. So that was me, I was always in there helping her."
And now he's helping fans have the perfect dining experience while cheering on their favorite Dallas teams.
So what's the starting line-up looking like? Well, here's the buffalo chicken sandwich and the buffalo chicken waffle fries.
"A version of a nacho if you will,” Mabry said. “We took the waffle fries and we layer them with bleu cheese. We have a pepper jack cheese sauce."
Staying true to game-food form, Mabry offers two all-beef foot-long Texas dogs. But if you want the ultimate taste of the Lone Star State, Mabry and his team smoke about a thousand pounds of brisket a game to make items like the barbeque mashed potatoes and the barbeque mac and cheese.
Chew on This, the star player right now has to be the Dirk Burger. And it’s being offered through the month of March.
"The real key to this is this bacon-onion marmalade,” Mabry told NewsFix.
Not to mention, jalapeno beer cheese, horseradish and mustard aioli, and fresh arugula – topped off with a Bavarian pretzel bun. And much like Dirk, it does not suck.
