Apple Pie Cookies With Bourbon Whipped Cream

Holiday time or any time is good to have a Blitzen! They are apple pie cookies with bourbon whipped cream! Rebecca Combs from Spirited Cooking shows Oliver Tull how they're made. She also tops it off with a limoncello cocktail.

Apple Pie Cookies With Bourbon Whipped Cream:

1 Pie Dough Recipe (or store bought)
For the filling: slice granny smith apples into matchsticks
Mix with a few tablespoons of melted butter, a few heaping spoon fulls of brown sugar, and a few dashes of cinnamon
Use a cookie cutter or cup to cut the pie dough into disks.
Brush with egg wash and put a spoon full of apple mixture in the center.
Top with another circle of dough and press the sides down.
Top with more egg wash and cinnamon/sugar mixture
Cut slits in the top
Back at 450 for about 12-15 minutes
Once cooled, top with cinnamon bourbon whipped cream.
For Cinnamon Bourbon Whipped Cream pour 1 pint heavy whipping cream into mixing bowl and whisk.
Add some powered sugar and continue whisking.
Add a few squeezes of cinnamon and vanilla.
Pour in bourbon to taste and finish mixing.
Limoncello Cocktail:
Limoncello cocktail is a shot of limoncello with juice of half a lemon, topped with prosecco, and a sprig of mint.
