DALLAS – Who doesn’t want a Parisian getaway? Well, if you don’t have the time or money to escape to Paris and you live in the Metroplex, you can get a bite-sized experience by heading over to Bisous Bisous Patisserie on McKinney Avenue where the only thing sweeter than the treats they serve, is the story of how this shop came to be.
"My husband and I went on our honeymoon to Paris in 2003,” said Andrea Meyer, owner and Chef of Bisous Bisous.
“And we went back every year on vacation. Just fell in love with the city, fell in love with the culture and, of course, fell in love with the food. I had had my first macaron that year when we were in France. I knew that I wanted to do something with pastry, but I worked retail through school, got a corporate job."
But that wasn’t fulfilling. So Andrea Meyer quit her job at Ernst & Young, went to culinary school, and gave birth to Bisous Bisous. And it’s been smooth sailing ever since.
One of Bisous Bisous’ specialties? The macaron or course.
"The French macaron is an almond and powdered sugar cookie that's made with a meringue. And those are baked separately and they're sandwiched around a variety of different flavors,” Meyer said. "We have 12 flavors at any given time. We always have them in stock.”
And boy do these babies sell! So much so, extra kitchen help is needed to create them. Chew on this,
Chew on this, Bisous Bisous is the only patisserie in the Metroplex that uses this macaron making machine. Her name is Josephine and she’s indispensable if you’re turning out up to 13,000 macarons each month.
But it’s only right that Meyer still pipes them by hand from time to time.
