Veggie sandwiches make life easy, comfy

These simple sammies are sure to satisfy, thanks to puffy rolls, soft fresh cheese and enough oil and salt for the richness raw veggies to come through. They make a great lunch or quick and easy dinner. Perhaps serve with some homemade soup on the side!

Greek Salad Sandwich

  • 1 Ciabatta roll
  • 2 slices tomato
  • 2-4 slices cucumber
  • 2 tbsp. feta cheese
  • 1 tsp. extra virgin olive oil
  • Salt and pepper to taste

Tomato Mozzarella Sandwich

  • 1 Ciabatta roll
  • 1 thick slice of fresh mozzarella
  • 1-2 basil leaves
  • 1 thick slice tomato
  • 1-2 slices roasted red pepper
  • 1 tsp. extra virgin olive oil
  • Salt and pepper to taste

For both sandwiches, slice the rolls open and layer the ingredients one at a time.
