Chocolate Covered Strawberry Krispy Treats Recipe

Need a treat for your sweetie this Valentine’s Day? Candy hearts and chocolate are so boring! Step into the kitchen and mix up a batch of these chocolate covered strawberry krispy treats to give your sweetie something sweet!

Chocolate Covered Strawberry Krispy Treats

10    cups             Rice Krispies Cereal

1/2   cup              butter

3      ounce           strawberry gelatin powder

4      cups             mini marshmallows (two 10 ounce bags)

1      teaspoon       vanilla beans (or 2 teaspoons vanilla extract)

1      teaspoon       salt

2      cups             chocolate chips

1      cup               crushed circus animal cookies (or sprinkles of your choice)

Heat a stock pan to medium-low heat and add butter. Once butter is melted, add strawberry gelatin powder, vanilla and salt. Stir until the gelatin is dissolved and then add the marshmallows.  Continue to stir until the marshmallows have completed melted and mixture turns light pink.  Remove the pan from the heat and fold in the Rice Krispies cereal.  Line a 9×13 baking pan with parchment paper and spray lightly with vegetable spray. Evenly press mixture into the pan and cool in the refrigerator. Once it’s hardened, cut into 2×3 inch rectangles.  Place two cups of chocolate chips in measuring cup and slowly melt in the microwave at 30 second intervals. Dip one end of the treats into the chocolate and sprinkle with cookies.  Place cookies on sheet pan until chocolate sets and enjoy.
