DALLAS -- The smell of smoked meat intoxicates the senses, as you you walk near Lockhart off of 15th street in Plano.
Nestled next to quaint shops and historic buildings, the BBQ joint has become the second home of the popular Lockhart Smokehouses. Long before the lunch hour strikes, a line of folks, hungry to devour smoked meats and sausages, begins to form at the restaurant.
The building has lots of character and used to be part of an antique shop next door. It was the perfect addition for Jill Bergus, who first brought her family's legacy to the Bishop Arts District in Oak Cliff.
“It has such a great neighborhood feel. It felt like a small community," Bergus said of the Bishop Arts Location.
A sense of community is what drew Bergus to the Plano location as well. After Lockhart's success in the Bishop Arts, she said it only made sense to find something similar.
Lockhart is named after the central Texas town that has become know as the BBQ capital of the world. Bergus’ grandfather, Edgar “Papa” Schmidt, helped shape that legacy. He ran the famed Kruez market.
It was trip to New York that inspired Bergus, and her husband Jeff, to try their hand at the BBQ biz. While visiting a restaurant from a former resident of Lockhart, she saw pictures of her grandparents' famed BBQ. Bergus thought if it could work in NYC, it could definitely work in Dallas.
“We always had the crazy idea of wouldn’t it be cool to do BBQ," Bergus explained. “There is no place in Dallas that does BBQ like what I grew up on."
Lockhart isn’t your traditional BBQ. “We don`t do sandwiches; you don`t walk in and get your three plate special," Bergus added.
The restaurant is designed like a traditional meat market. You order by the pound, and they cut it right in front of you. They’ll give you bread, and you get sauce and pickles at a condiment table.
Bergus smiles when she talks about people's experience with the food. “When you get back to the table and unwrap that paper you get back to your communal cave man roots."
So grab a napkin, and your appetite, and dig in to some good ole wood smoked BBQ.
