Fajita Cheese Bread Sliders Recipe

It’s football time in America! Time for tailgates, parties, and food! And to get you ready for all that football watching, we’ve got a recipe that’s perfect for game day!

Fajita Cheese Bread Sliders


2             eggs

2/3          cups olive oil

1 1/3       cups milk

3             cups tapioca flour

1             tablespoon chopped garlic

2             teaspoon salt

1/2          cup grated parmesan

1/2          cup queso fresco or Oaxaca cheese

For topping

1/2          cup chopped cilantro

1/4          cup grated Oaxaca cheese


Pre-heat oven to 350 degrees. Place eggs, olive oil, milk, tapioca starch and salt into a blender and mix until well combined.  Fold in cheeses, batter should be a little thinner than pancake batter.   Put batter into measuring cup for convenient pouring.  Spray mini muffin tins with vegetable oil and pour mixture 2/3 of the way full.  Top with cilantro and shreadded oaxaca cheese.  Bake for 10-15 minutes until they have puffed and are just starting to color. Cool briefly and eat. Leftover cheese bread can be kept in an airtight container for up to a week and re-crisped in a warm oven or toaster oven.

Fajita Steak

1             pound New York strip steak

2             teaspoon kosher salt

2             teaspoon fresh ground black pepper

1             teaspoon ground cumin

1             cup sliced red bell peppers

1             cup sliced green bell peppers

1             cup sliced yellow onion

3             tablespoon vegetable oil


Heat grill to medium high heat.  Marinade steak in a ziplock bag with two tablespoons of oil, one teaspoon of salt/pepper and cumin for at least an hour.  Grill meat to desired temperature and allow meat to rest for 4-5 minutes before slicing (see below for temps).   In a large skillet heat up the remaining 2 tablespoons vegetable oil and fry the onions and bell peppers until crisp-tender with some salt and pepper.

To assemble sliders:

Slice cheese bread in half horizontally, place 2-3 thinly sliced meats on the bottom, top with sauteed onions and peppers, top with bread and skewer to keep sliders together.
