Fresh cilantro and lots of lemon make this naturally creamy dip awakening and full of flavor. It's ready in a minute, great for entertaining, and it won't spoil your appetite!
1 (15 oz.) can cannellini beans, drained and rinsed
1 clove garlic
½ cup loosely packed cilantro
2 tbsp extra virgin olive oil
2 lemons, juiced
Salt to taste
Combine all ingredients in a blender or food processor. Blend until creamy.
Serve with crackers or vegetables.
