This artful salad combines a handful of fresh, simple ingredients. It is a pretty dish with classic flavor.
Sliced Zucchini Salad
- 2 small-medium zucchini
- 10 oz. grape tomatoes, sliced in half
- ¼ cup fresh basil, chopped
- 2 gloves garlic, pressed
- 2 tbsp balsamic vinegar
- 1 tbsp extra virgin olive oil
- Salt to taste
Using a mandolin, thinly slice the zucchinis, and then use a knife to chop them into thinner slices that somewhat resemble spaghetti. Add the sliced zucchini to a large bowl with the remaining ingredients. Toss well.
