You wouldn’t think something so healthy could be so tasty! This dip is creamy, ranchy and easy to prepare.
Creamy Cashew Dip
- 1 cup raw cashews, soaked in 1 cup of water for 30 minutes
- Juice of 1 lemon
- 2 cloves garlic
- ¼ tsp dried dill
- ¼ tsp dried oregano
- 1 tsp salt
- 1/3 cup water
- 2 tbsp fresh chives, chopped
After soaking the cashews, drain out the water and place the nuts in a food processor. Add the lemon juice, garlic, dill, oregano and salt. For best results, start blending while slowly adding the water. Blend for 2-3 minutes, until smooth and creamy.
Serve with your favorite veggies.
