Bacon Blue Cheese Sliders Recipe

We’re hitting the kitchen to cook up some bacon blue cheese sliders that are sure to be gone in a flash at your next party! YUM!

Blue Cheese Sliders

3 pounds coursely ground sirloin, chilled
16 slices (1 pound) apple smoked bacon
1 tablespoon finely chopped fresh thyme
2 cloves of zested garlic
2 teaspoon ground black pepper
1/2 cup crumbled blue cheese (room temperature)
1 tablespoon sea salt
2 1/2 cups baby arugula
1 small red onion (thinly sliced)
1 pint grape tomatoes
24 Hawaiian Rolls

Over medium heat, cook the bacon until crisp and drain them on a paper towel.  Take 8 of the strips and cut each into 3 pieces.  Crumble the other 8 pieces.

In a large bowl, combine the meat, thyme, garlic, crumbled bacon and black pepper. Using hands, knead together lightly, being careful to not over mix.  Form 24 balls (about 2 ounces).  Create a little hole in the ball and fill with 1 tsp of blue cheese, pinch the meat back together and form a pattie the size of your bun.  Once burgers are shaped, cover with plastic wrap, place the patties back in the refrigerator to chill for 1-2 hours or overnight.

When ready to cook, heat skillet to medium-high heat and place 2 tablespoon of olive oil. Season burgers with salt and pepper and place in the pan.  Cook for 2-3 minutes on each side basting with the rendered fat from the meat.  Do not press the meat.  Place the onions on the grill and grill for 3 minutes on each side.  Take the patties off the grill and allow to rest for 5 minutes.  In the meantime, toast the buns.

To assemble, from the bottom of the bun, layer with choice of mayo or mustard, arugula, burger, grilled onion, bacon, bun top and skewered tomato.
