Beautifully Roasted Asparagus
- 1 bunch asparagus
- 1 tbsp extra light olive oil
- ½ tsp dried tarragon
- Salt and pepper
- ½ pint cherry or grape tomatoes, chopped
Preheat oven to 425F.
On a baking pan, mix all the ingredients except the tomatoes. Roast for 6 minutes. Stir and add the tomatoes to the pan. Roast for 4-6 minutes more.
