3 chicken breasts, cooked and shredded
1 teaspoon cumin
2 packages shredded cheese, like Monterey Jack and cheddar
1 chipotle pepper
1 small onion
2 cloves of garlic
1 can Enchilada sauce
1 bag Doritos
Preheat oven to 400°
Chop one chipotle pepper in adobo sauce and mix with the shredded chicken and one teaspoon cumin.
Over medium heat, sautee together one small chopped onion and 2 cloves of chopped garlic in a large pan.
Add chicken mix, cheese, crushed Doritos and combine.
Spoon chicken mixture into corn tortillas into a single layer in baking dish.
Pour half a can of enchilada sauce on top, add generous amount of shredded cheese and repeat with a second layer.
Add Doritos on top, cover with foil, and cook 15-20 minutes.
