DALLAS -- Say hello to my little friends: the mud bugs.

Yep!  Crawfish season is here, and I couldn't be more excited!

It doesn't matter how you serve them, these little guys are my favorite things in the world.  And believe me, I love 'em every which way.

If I'm serving them, it's all about that Cajun style.  Boiled up just right with some Cajun seasoning, lemons and limes sliced up on the side and a bed of veggies underneath.  I just can't get enough.

But it wasn't always that way...

When I met my first mudbug, I was scared.  It was alive!  It was moving around, its eyes were moving back and forth, staring back at me. But I took a deep breath, faced my fears, ripped off that tail, sucked that head, and ate my first crawfish.  It was one of the greatest experiences of my life, and I never looked back.

Which brings us to today's Spice of Blythe: FACE YOUR FEARS!!  Embrace the challenge, look the crawfish in the eyes and try something new.
