Apple Pie Cookies With Bourbon Whipped Cream:
For the filling: slice granny smith apples into matchsticks
Mix with a few tablespoons of melted butter, a few heaping spoon fulls of brown sugar, and a few dashes of cinnamon
Use a cookie cutter or cup to cut the pie dough into disks.
Brush with egg wash and put a spoon full of apple mixture in the center.
Top with another circle of dough and press the sides down.
Top with more egg wash and cinnamon/sugar mixture
Cut slits in the top
