Fish Tacos: YUM

This bright and flavorful dish will light up your taste-buds without weighing you down. The intentional intermingling of lean protein, potent spices, and fresh toppings makes for a tasty and satisfying combination. It’s also a fun/no-fuss weeknight meal.

Fish Tacos

  • 1 lb. tilapia
  • Salt and pepper
  • ¼ tsp. cumin
  • ¼ tsp. chili powder
  • 5 cloves garlic, minced
  • 1 tbsp. olive oil
  • Juice of 1 lime
  • 6 medium tortillas, warmed
  • 1 avocado, sliced
  • Pico de gallo (see recipe previously posted)

Generously salt and pepper the fish, and then place it in a Ziploc bag with the spices, minced garlic, oil, and lime juice. Marinate for 15 minutes.

Warm a grill pan over high heat. Cook the fish for about 3 minutes per side until cooked through.

To prepare each taco, place some fish in a warm tortilla. Top with a generous serving of pico de gallo and sliced avocado.

Serves 2.
