This simple salad is beautiful for the holidays and it’s full of life and vitality for New Years resolution time too!
Spinach and Strawberry Salad
- 1 cup walnuts
- 2 tbsp. maple syrup
- 4 cups fresh spinach
- 2 cups strawberries, sliced
- ½ cup feta, partially crumbled, partially in chunks
- 3 tbsp. extra virgin olive oil
- 1 tbsp. balsamic vinegar
- 1 tsp. tahini
- 1-2 cloves garlic, pressed
- Salt and pepper to taste
Heat a medium skillet over medium heat. Add the walnuts and syrup. Stir often for about five minutes, until the ingredients are warm and well combined. Set the nuts aside to cool on a dish in a single layer for 10-15 minutes.
In the meantime, combine the oil, vinegar, tahini, garlic, salt and pepper in a small bowl. Stir well.
In a large bowl, combine the spinach and strawberries. Pour the oil mixture on top and toss well to coat. Add the feta and walnuts and gently toss once more.
