Edamame Salsa is Spicy Side Salad & Light Appetizer

For a light appetizer or a spicy side-salad, make this!  It’s a zesty, multi-purpose dish that’s as bright and beautiful as it is delicious.  Serve it with tortilla chips or a spoon!

Edamame Salsa

  •  1 avocado, diced
  • 1 tomato, diced
  • 5 oz. shelled edamame
  • 2 cloves garlic, minced
  • 1/2 small jalapeno, minced
  • 2 tbsp. chopped spinach
  • 2 tbsp. chopped cilantro
  • 2 tbsp. chopped red onion
  • 1/2 lime, juiced
  • Coarse salt to taste

Combine all the ingredients in a medium bowl and toss gently to coat.

Serves 2.
