This rich and creamy dip is great for holiday entertaining. Roasted red peppers add vibrancy to the salty cheese. It’s a tasty combination that is sure to impress!
Feta and Roasted Red Pepper Dip
- 1 red pepper
- 1 cup feta cheese
- 1 large clove garlic
- 2 tbsp. extra virgin olive oil
- Pinch of salt
- Pinch of cayenne
Roast the red pepper: preheat oven to 400°. Lay the pepper on a foil-lined baking sheet. Bake 20 minutes, and then flip the pepper. Cook 20 more minutes. Let it cool and then remove the stem and seeds.
Combine all the ingredients in a food processor. Pulse until combined, about 1 minute. Serve with toasted pita, crostinis, chips or veggies.
Makes 3/4 cup.
